2 (3 oz.) chicken cutlets
2 slices ham
2 slices Swiss cheese
1 1/2 tablespoon Dijon mustard, divided
1 teaspoon honey
1/3 cup plus 2 tablespoons bread crumbs
1/2 can chicken broth
2 teaspoons flour
1 tablespoon sour cream

Directions:

Preheat oven to 375. Top each cutlet with ham and then with cheese. Roll up and secure with toothpick.

In a mixing bowl, combine 1 tablespoon mustard and honey. Spread mixture over rolls. Roll chicken bundles in the bread crump mixture using all of the crumbs. Spray lightly with Butter Spray. Bake until chicken is cooked through, 20 - 25 minutes.

While the chicken is cooking, in a small saucepan, combine the broth and flour, stirring until it dissolves. Cook over medium heat. Stir often until sauce thickens, 3 - 4 minutes. Reduce sauce to low and stir in sour cream and remaining mustard. Cook an additional 3 - 4 minutes on low. Do Not Boil.

Remove toothpicks from chicken. Pour sauce over and serve.
