1 lg fillet of salmon (I like Costco's)
lots of lemon juice
lots of Parmesan cheese
Chef's Magic Blackened seasoning mix

Directions:
Directions:
Fork vigorously the salmon fillet to make openings for the lemon juice to saturate. Pour lemon juice generously all over the top of the salmon. I'm told that the more lemon juice used, the less your house and oven smell of fish. (I probably use 1 cup on a salmon as long as my cookie sheet.) Then generously blacken the salmon and cover with fresh grated Parmesan cheese. Bake at 350 for about 1/2 hour, depending on the size of your fillet. Check with fork to make sure it's cooked through. This is great with rice and Ivey's grilled veggies. You can add butter or mayo before the blackening, but I have found it is moist enough and tastes great without!
