3/4 c. sugar
1/3 c. all purpose flour
1 1/2 tsp. baking powder
1/8 tsp. salt
1 tsp. vanilla
1 egg (or egg whites, slightly beaten)
1 medium apple finely chopped
1/3 c. nuts

Directions:
Directions:
Heat oven to 350. Beat sugar, flour, baking powder, salt, vanilla, and egg in a 1 1/2 qt. bowl, on medium speed until smooth (for about 1 minute). Stir in apple and nuts. Pour into a 9 in. pie pan which was slightly sprayed with Pam. Bake until golden brown (about 30 minutes). cut into wedges. Serve warm w/ whipped cream, ice cream, or plain.
