2 tomatoes chopped, 1 onion chopped, 1 can chopped green chilies, 1 can chopped black olives, cilantro-cut into small pieces.
Optional: celery, green/red/yellow peppers, mushrooms.

Sauce:
3 T. wine vinegar, 1 T. vegetable oil, 1/4 tsp. salt.

Directions:

Pour sauce mixture over all vegetables and chill overnight. Drain juice before serving.
