1 - 8 oz. box chopped dates
1 tsp. water
1 c. walnuts, chopped
2 egg whites
1 c. brown sugar, packed
1 T. butter
1 c. shredded coconut

Directions:
Directions:
1. Preheat oven to 350 F. Grease cookie sheets.
2. In small saucepan over low heat, combine butter, water, and dates. Bring to boil, then remove from heat, and let stand for 10 minutes.
3. Pour date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.
4. Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture. Roll dough into 2" balls and roll in shredded coconut. Place on cookie sheet about 2" apart.
5. Bake for 12-15 minutes in the preheated oven. Let cool on wire racks.
