2 cloves garlic
2 35 oz. cans peeled plum tomatoes
2 6 oz. cans tomato paste
2 lbs. extra large fresh peeled schrimp
2 tbsps. parsley
2 tbsps. oregeno
2 tbsps. Paul Prudhomme's Seafood Magic
3 tbsps. virgin olive oil
salt & pepper to taste

Add oil and chopped garlic to a large saucepan and heat for 5 minutes over medium-heat. Puree tomatoes in a blender and add to oil and garlic. Add two cans of tomatoe paste and all the seasonings to the mixture. Bring to a boil, reduce heat and simmer for 90 minutes. Reheat to a boil and add fresh shrimp and cook over medium heat for about 7 minutes or until scrimp are firm and pink. Do not overcook as shrimp will become tough. Cook and drain 2 lbs of linguine and toss with sauce. Serve with grated Parmesan cheese.
