1 tsp. extra-virgin olive oil
1 lb. ground chicken
1 large onion, chopped
1 qt. chicken broth (low sodium)
3 c. cooked Great Northern Beans, drained or 2 (15 oz) cans Great Northern Beans, drained and rinsed
1 - 4 oz. can chopped green chilies
1/2 c. chopped red bell pepper
1 tsp. dried oregano
1 1/4 tsp. garlic powder
Pinch of Cayenne pepper
1 c. shredded Monterey Jack cheese (reduced fat)

Directions:
In a large skillet, heat the oil over medium heat. Add chicken and onion and saute until chicken is thoroughly cooked. Transfer mixture to a 3 qt. saucepan. Stir in chicken broth, beans, chilies, bell pepper, oregano, garlic powder, and cayenne pepper and bring to a boil. Remove from heat and stir in cheese.
