1 large cucumber, peel and remove seeds
1 bell pepper
1 large carrot
1 small onion
1 envelop unflavored gelatin
1 c. mayonnaise
salt and pepper to taste

Directions:
Directions:
Grate vegetables coarsely, except onion, which is finely grated. Squeeze out the natural juices, saving 2 tbsps. Soften gelatin in the reserved 2 tbsps of juice. Melt in double boiler until gelatin is completely dissolved. Add to grated vegetables. Add mayonnaise and mix. Add seasonings to taste. Refrigerate over night before using.
