6-8 thin sliced chicken cutlets
1/2 tsp. salt
1/2 tsp. freshly ground pepper
all purpose flour for dredging
4 tbsps. unsalted butter
2 tbsps. extra-virgin olive oil
1/2 cup low sodium chicken broth
1/3 cup freshly squeezed lemon juice (about 2 lemons)
1/4 cup drained capers, rinsed (optional)
3 tbsps. fresh parsley, chopped

Directions:

Season chicken with salt and pepper. Dredge in flour to lightly coat. In a large saute pan, heat 2 tbsb. olive oil and 2 tbsps. butter over medium-high heat. Add chicken and cook a few minutes on each side until just golden. Remove chicken to a plate.

Add broth, lemon juice and capers to pan. Bring to a boil. When pan is deglazed, return chicken to pan and heat for 5 more minutes until chicken is cooked through. Place cutlets on a platter. Then, whisk last 2 tbsps. butter into sauce and pour over chicken. Garnish with fresh chopped parsley and thin slices of lemon, if desired.

This is really just chicken piccata, but when Lindsay was three, I did something wrong or maybe the lemon was bad. When we started to gag on our bitter, awful meal, Lindsay said "what did you make? Killer chicken?" Luckily, I never goofed again, and this remains one of Lindsay's favortes to this day! We love to serve it with mashed potatoes and broccoli rabe with garlic and olive oil.
