1 lb. Roma Tomatoes
2 Tbsp. Onion
2 cloves Garlic
2 tsp. Basil
1/4 cup Red Wine Vinegar
6 Tbsp. Olive Oil
Fresh Parmesan Cheese
2 oz. Creamy Goat Cheese

Directions:
Chop tomatoes, remove seeds. Place in a bowl with onion, garlic, basil, vinegar and half of the olive oil. Salt and pepper to taste. Let stand at room temperature for at least 1 hour. Cut bread on bias - not too thick. Spread a baking sheet with remaining olive oil and extra crushed garlic. Put the sliced bread on the baking sheet, press the slices (both sides) in the oil. Bake slightly until crisp.

Drain tomatoes. Spread each slice of bread with goat cheese. Add tomatoes on top. Sprinkle with Parmesan cheese. Broil to melt the cheese. Makes approximately 30 appetizers.
