1/3 c. butter, softened
1/4 c. sugar
1 egg
1 1/2 c. flour
1 pkg. (3.4 oz.) instant vanilla pudding mix
1 tbsp. baking powder
1/4 tsp. salt
1 1/4 c. milk
1/3 c. brown sugar
2 tbsp. butter, melted
1/4 tsp cinnamon

Directions:
In a mixing bowl, cream 1/3 c. butter and sugar. Beat in egg. Combine flour, pudding mix, baking powder and salt: add to the creamed mixture alternately with milk. Beat until blended. Fill paper-lined muffin cups two-thirds full. Combine brown sugar, 2 tbsp. butter and cinnamon. Sprinkle over batter. Bake at 375 for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
