1 c. unpeeled zucchini squash, grated
1 c. sugar
1 egg
1/2 c. vegetable oil
1 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp. grated lemon peel

Directions:
Directions:
Mix and beat together zucchini, sugar and egg. Add oil and mix. Sift together flour, cinnamon, salt, nutmeg, baking soda, baking powder and lemon peel. Add to zucchini mixture. Bake in a greased loaf pan at 325 for 1 hour.
