3 Chicken breasts, cubed
1 c. water
1 packet taco seasoning
1 jar Chunky Salsa
1 can corn, drained
1 can black beans, rinsed and drained
2 c. Mexican blend cheese, divided
1 can mild enchilada sauce
green onions, sliced
8 soft taco size flour tortillas
lettuce, shredded
sour cream

Directions:
Directions:
Cook chicken in a medium saucepan with 1 c. water. When chicken is cooked stir in taco seasoning according to package directions. In a bowl combine salsa, corn, black beans and 1 C cheese. Add chicken. Spoon enough enchilada sauce on the bottom of a 9x13 pan to cover. Place 2/3 c. chicken mixture down the center of each tortilla, roll and place seam side down in pan. Top with remaining enchilada sauce, cheese and green onions. Bake at 350 degrees for 30 minutes. Serve on a bed of shredded lettuce and top with sour cream.
