Ingredients:  
1 lb. veal/chicken cutlets, trimmed, pounded thin, cut into 2 inch pieces
1/3 cup freshly grated Parmesan cheese
1 garlic clove, crushed
3 tbsps. butter
1 tbsp. oil
1/4 cup beef broth
1/4 cup Marsala wine
(can add mushrooms too)

Directions:
Directions:
Dip meat into Parmesan cheese to coat both sides. Melt butter and oil in skillet. Add garlic & veal. Cook lightly til browned on both sides. Remove veal to warm platter. Turn heat up & add broth, stirring & scraping bits of meat clinging to skillet. Cook 1 minute over high heat. Add wine & cook 1 minute more. Pour over veal & serve.
