Vegetable oil spray
1/2 cup chopped onion
1/2 teaspoon bottled, minced garlic
1 tablespoon balsamic vinegar or red wine vinegar
1 teas firmly packed brown sugar
1/8 - 1/4 teas crushed red pepper flakes
1 (15 oz) can mandarin orange sections , drained
1/3 c chopped tomatoes
1/3 cup chopped, avocado
1 tablespoon freshly squeezed lime juice
2 (8-ounce) tuna steaks, The fresher the better!

Directions:
Directions:
Spray a medium saucepan with veg oil. Place over med high heat. Add the onion and garlic, cook until the onion is tender, 5 min.
Stir in the vinegar, brown sugar, and pepper flakes. Cook and stir until the sugar dissolves (2 min).
Remove from heat and allow to cool slightly. Stir in the oranges, tomato, avocado, and lime juice. Set aside.
Spray the fish with veg oil. Place over med. high heat on the grill or cook in fry pan. Cook for 5 min per side. Slice each steak in half and divide into portions. Serve topped with salsa.

11/10/07 Jason and I were in Seattle and stayed at Tim & Cheryl Bodine's home. (Cheryl is Aunt Joan's daughter, Shirley Roylance's sister). Tim cooked this for us, this is really delicious. Both Jason and I liked it very much.
