2 c. chicken breast (5 halves) cooked and chopped
2 c. chopped celery
2 tbsp chopped pimiento
2 tbsp. chopped onion
1/2 can cream of chicken soup
1 c. mayonnaise (can use light or no-cholesterol version)
1/4 tsp salt
1/4 tsp. pepper
1 (8 oz.) package shredded sharp cheddar or swiss cheese
1 c. crushed potato chips

Directions:
Directions:
Mix chicken, celery, pimiento, onion, soup, mayonnaise, salt and pepper. Pour into a 2-quart casserole dish or into 4 plastic freezer containers. Top with shredded cheese. Can be frozen at this point. If frozen, thaw in refrigerator, then bake in an ovenproof casserole at 350 for 20 to 30 min., until bubbly and hot. Top with crushed potato chips.
