3 Tablespoons oil
5 cloves garlic
2 medium onions, thinly sliced
2 cups chicken or pork, cubed (can be pre-cooked)
2 cups chicken broth
2 large carrots, julienne strips, blanched
2 cups celery cabbage sliced in thin strips
1 teaspoon ginger powder
3 Tablespoons soy sauce
Package of rice sticks (sold in the Asian food section)
1 cup green onion tops, chopped fine
4 eggs scrambled and chopped fine

Directions:
Directions:
Saute onion and garlic in oil. Add meat, fry until cooked. Add 1 cup of broth, veggies and seasonings, cook until tender but firm. Add noodles and stirring continuously until soaked, adding in more broth as needed. Add half the green onions and eggs. Garnish with remaining eggs and green onion. Serve with soy sauce.
