2 large russet potatoes, peeled, diced

1 1/2 medium yellow onions, chopped

2 carrots, dices

3 ribs celery, chopped

2c. chicken broth

1/4c. butter

1/2c. flour

1/4tsp. pepper

2c. milk

1tsp. dry mustard

3c. shredded Cheddar cheese

Directions:
Directions:
Combine the potatoes, onions, carrots, celery, broth and butter in a large saucepan. Simmer, covered, over medium heat for 20 minutes or until the vegetables are tender.

Combine the flour, pepper, milk and mustard in a blender jar. Process until smooth. Add to the vegetable mixture; cook for 5-10 minutes, or until thickened, stirring constantly.

Add the cheese; stir until melted. Ladle into individual soup bowls. May also serve in sourdough bread bowls ( hollowed round loaves of bread.)
