Zucchini: Score the skins of young zucchinis vertically with a potato peeler and slice into rounds. Heat in the microwave until tender.

Sprinkle lightly with Parmesan before eating.

Green Beans: Tenderize in microwave, season lightly with lemon pepper before enjoying.

Beets: Sprinkle cooked sliced or cubed beets lightly with lemon pepper.

Carrots: Spray cooked carrots lightly with lemon juice.

Butternut or Acorn Squash: Mash cooked squash with mixer (or use food processor) then mix in a little butter or, in our case butter or could substitute a very little cinnamon and/or brown sugar.
