Directions:
Directions:
Wash firm, ripened tomatoes cutting out any bad spots, and removing stem area. Cut into quarters and press through fine sieve of food processor a few times until juice is consistency desired. (Will have about 1 quart pulp left over to 11 or 12 quarts juice.) Bring to a boil in enamel water bath canner then simmer for 10 to 20 minutes. Pour immediately into sterilized hot quart canning jars with 1 tsp salt in bottoms to within 1/4 inch of top. Adjust caps. Process in water bath for 20 minutes. Cool out of draft with towel over. This also serves as a tomato soup base or adds flavoring for other soups/stews.
