3 c. sugar
1 c. oil
4 eggs
1-1/2 tsp. cinnamon
1-1/2 tsp. salt
2 tsp. baking soda
2-1/2 c. pumpkin
3-1/2 c. flour
chopped walnuts (optional)

Directions:
Directions:
Combine sugar, oil and eggs. Add cinnamon, salt, baking soda and pumpkin. Add the flour slowly and mix well.

Grease 2 loaf pans and fill 3/4 full. Bake at 350 for about 60 minutes.

Sprinkle some sugar on top before baking to give it a sweet crunchy topping.
