1 1/4 cups sugar
1/2 cup stick margarine or butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas (3 or 4)
1 tsp. vanilla
2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts, if desired

Directions:
Directions:
Mix sugar and margarine in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in the nuts. Pour into pans.
Bake @ 350. If you use 8" loaves cook about 1 hour, 9" loaves cook for 1 1/4 hours or I use 4 mini loaves for 30-35 minutes @ 350. Remove from pans and let cool completely before slicing.
