1 pkg (3.4 oz.) instant banana cream pudding
1 can mandarin oranges, undrained
1 can (15 oz.) pineapple tidbits, undrained
2 tbsp. rum (or rum flavoring)
1 pkg. (8 oz.) Cool Whip
1 c. coconut, toasted

Directions:
Directions:
Combine pudding mix with fruit and rum flavoring. Fold in cool whip. Toast coconut by placing it in a baking pan under the broiler for a few minutes. (it burns very easily if left unattended!) Sprinkle coconut on top of salad and chill.
