8-6 oz. boneless chicken breasts
1 t salt
40 large spinach leaves
1/2 c walnuts, chopped
2 sheets frozen puff pastry, thawed
1 egg
1/2 tsp pepper
2-8 oz cartons spreadable chive and onion cream cheese
1/2 tsp cold water

Cut a slit in each chicken breast to within 1/2 inch of other side; open meat so it lies flat. Cover with plastic wrap; pound until 1/8 inch thickness. Remove plastic. Sprinkle salt and pepper chicken. In a sauce pan bring 1inch of water to a boil. Add spinach and cook until wilted. Drain . Place 5 leaves on each chicken breast. Spoon 2 tbsp cream cheese mix down center of each chicken breast; add some walnuts; roll up chicken. Unroll puff pastry ; cut into 8 portions. Brush with egg and water mixture. Place chicken at one short end; roll up tightly, tucking in ends. Place on a greased 15x10x1 inch baking sheet. Bake at 350 degrees for 25-30 minutes until golden brown. Yield: 8 servings
