Black Bean Salad Recipe

cup apple cider vinegar
cup olive oil or vegetable oil
1 cup sugar
tsp salt
2 tsp chopped garlic
tsp pepper
1 tsp Italian dressing seasoning mix
2 T water

3 cans black beans, rinsed and drained
1 can whole kernel corn
1 jar chopped pimientos (4 oz)
2 stalks celery, chopped fine
green bell pepper, chopped fine
medium onion, chopped fine (Vidalia or red)

Combine first 8 ingredients in sauce pan, bring to a boil, stirring to dissolve sugar and let cool.

In a separate bowl combine the vegetables then stir in vinegar mixture. Cover and put in refrigerator overnight, stirring occasionally. Looks yummy served in a colorful bowl.
