1 lb. summer squash
1 medium onion, chopped
1/3 cup water
cup butter
tsp. salt
1/8 tsp. pepper
1 tbsp. sugar
2 eggs, beaten
tsp. soy sauce
cup grated cheddar cheese
cup cracker or bread crumbs
1/8 tsp. paprika

Heat oven to 350 degrees. Grease 1 qt casserole dish. Cook squash and onion in water (1/3 c.) with salt until tender enough. To mash. Mash and add salt, butter, pepper, sugar, eggs, soy sauce, c/ grated cheese, and c. cracker crumbs. Pour into prepared dish. Bake twenty minutes. Top with remaining crumbs and cheese. Sprinkle with paprika and continue baking 10-15 minutes.
