2 large sweet potatoes 1 tbsp of olive oil 1/4 tsp salt
Preheat the oven to 450 degrees. Cut the sweet potatoes into 1/2 inch strips or wedges and toss in the oil and salt. Arrange in a single layer on a nonstick baking sheet. Place in oven for 30 minutes, turning once.
Sweet potatoes are a great source of vitamins B6, C and beta-carotene, as well as a good source of fiber.
