2 Tbsp sweet cream butter
1 package (8 oz) sliced mushrooms
2 cups cooked roast beef, cut into strips about 1/2 inch with and 1 1/2 inch long
1 cup beef broth
2 Tbsp dry red wine
1 tsp Worcestershire sauce
2 Tbsp cornstarch
1 cup light sour cream
salt and freshly ground pepper
hot cooked fusilli
fresh minced chives (optional)

1.- In a 12-14 inch frying pan with a lid, melt butter over medium heat. Add mushrooms and stir occasionally until they begin to soften, about 2 minutes. Cover pan and cook, stirring occasionally, until mushrooms exude juices and are browned 5-7 minutes. 2.- Uncover pan and add beef. Stir often until beef is heated through and lightly browned, 1-2 minutes. Transfer beef mushrooms and any pan juices to a bowl, set aside. 3.- In another bowl, mix together 1 cup broth, wine, Worcestershire sauce, and cornstarch until smooth. Pour into pan and place over high heat. Whisk constantly until sauce boils and thickens. Reduce heat to medium and whisk in sour cream. Add beef, mushrooms and any juices back to pan and mix. If sauce seems thick, add another 1/4 to 1/2 cup broth. Stir until mixture simmers. Season to taste with salt and pepper. Spoon over fusilli and sprinkle with chives.
