1 1/2 pounds lean ground beef
1/2 cup bread crumbs
1 8 oz can tomato sauce, divided
1 egg
1 teaspoon oregano, divided
1 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups shredded mozzarella cheese
2 tablespoons grated parmesan cheese

Directions:
Directions:
Mix together the ground beef, bread crumbs, half of the tomato sauce, egg, 1/2 teaspoon oregano, salt and pepper. On wax paper, pat into rectangle 1/2 inch thick. Sprinkle with mozzarella cheese. Roll up by starting on the short side. Lift paper till meat begins to roll tightly. Peel back the wax paper to keep it free. Continue lifting and peeling to complete the roll. Seal edges and place in a loaf pan. Microwave on high 9 minutes. Then microwave on medium (50%) for 11 - 14 minutes or until meat loses most of the pink color. Combine remaining tomato sauce and oregano. Pour over the meatloaf. Sprinkle with parmesan cheese and microwave 2 minutes. Tent with foil and allow to stand 5 minutes.
