Crust
1 tbsp. butter
1 cup of graham cracker crumbs

Filling
1 lb. small curd cottage cheese
2 8 oz. packages softened cream cheese
1 1/2 cups of sugar
4 slightly beaten eggs
1/3 cup cornstarch
2 tbsps. lemon juice
1 tsp. vanilla
1/2 cup margarine, melted
1 pt. sour cream

Optional Topping
1 tbsp. sugar
1/2 cup sour cream
1 tbsp. graham cracker crumbs

Preheat oven to 325 degrees.

Crust
Grease bottom and sides of 9 or 10 inch springform pan. Sprinkle graham cracker crumbs over bottom and sides of pan. Pat firmly in place.

Filling
Mix cottage cheese and cream cheese with electric mixer at high speed until smooth. Blend in 1 1/2 cups of sugar and 4 eggs (slightly beaten) at high speed. At low speed, add cornstarch, lemon juice and vanilla. Beat until blended. Add 1/2 cup melted margarine and sour cream.

Bake at 325 degrees for 1 hour and 10 minutes. Turn oven off and leave in oven for 2 hours. Cool on rack. Refrigerate. Remove sides and frost as desired.

Topping Directions
Mix sour cream and sugar. Frost cake and sprinkle with graham cracker crumbs.
