Ingredients:
Ingredients:
4 lb. ground beef (fatty; lean won't work well)
1/2 C curing salt (Morton's Tender Quick)
2 Tbl. liquid smoke
1 1/2 tsp. garlic powder
1 1/2 tsp. ground pepper

Directions:
Directions:
Mix thoroughly by kneading with hands. (Use gloves to avoid skin absorbing strong scent.) Cover tightly and refrigerate for 24 hours. Divide mixture into 8 parts and shape into logs approximately 2 inches in diameter. Place on broiler rack in oven and bake at 225 for 4 hours. Remove and pat excess fat with paper towel. Cool. Wrap in foil and refrigerate or freeze.

Personal Notes:
Personal Notes:
Very tasty and good for when bulk ground beef is on sale. Keeps in fridge for a couple of months. Perfect snack with crackers and sliced cheeses. Experiment by adding other seasonings to the beef mixture.
