1/2 lb. orzo
1 lb. chopped and trimmed spinach
1/2 C chopped fresh mint
1/2 C crumbled feta cheese
1 - 2 Tbl. fresh lemon juice
1 T. olive oil
salt and pepper

Directions:
Directions:
In a large pot of boiling, salted water, cook orzo according to package directions. Stir in 1 lb. spinach until wilted. Drain. In a large bowl, toss hot spinach and pasta with mint, feta, lemon juice and oil. Season with salt and pepper.

Deliciously set off by the mint. It's a surprisingly easy, fast and fancy side dish.
