1 Lb dried Lima beans, soaked in water overnight, then rinsed
4 cups water
15 oz. chicken stock
5 oz canned ham broken into pieces
1 Tbs dried parsley flakes
15 oz diced tomatoes with juice
1 carrot peeled and finely diced
2 scallions trimmed and chopped
1/2 stalk celery finely diced
1 Tbs green pepper diced
1/2 tsp seasoning salt
1/2 tsp hot sauce
2 chicken bouillon cubes (the big Maggi ones are recommended)

Directions:
Directions:
Combine all ingredients in a large cooking pot and simmer for about hours covered, stirring occasionally. When the beans are tender, the soup is done.

This makes 8 servings of only 96 calories each, loaded with vitamins, potassium, iron, magnesium, calcium, and very little fat and cholesterol.
