"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1 chicken 3 cups flour, sifted 3/4 teaspoon salt 1 teaspoon baking powder 2 eggs 1 tablespoon lard or oil
Boil chicken and remove bones. Beat eggs and mix with one cup of boiling broth. Pour immediately into flour. Add more flour if dough is too moist. Roll on floured board and cut into strips. Drop into boiling broth and boil for at least 15 minutes. Add chicken pieces, cover and cook for about 20 minutes. Stir occasionally to keep from sticking.
This recipe was provided to me by mom, who gave it to me from memory years ago. She never wrote recipes down in the "old days."
