2 cups sugar
2 cups water, use water that beets were cooked in
2 cups vinegar
1 teaspoon cloves or pickling spice
1 teaspoon allspice
1 Tablespoon cinnamon

Directions:
Directions:
Select beets (small) cook with part of tops and roots on, cook until tender. Dip into cold water. Peel off skins. Make syrup and pour over beets and simmer 15 minutes. Pack into jars and seal.
