1 teaspoon vanilla
1 cup oil
2 cups sugar
2 eggs
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2-1/2 cups flour
1 cup nuts
3 cups raw apples, peeled, cored and chopped

Directions:
Directions:
Mix together vanilla, oil, sugar. Beat eggs into dry ingredients mixing well. Last add nuts and apples. Bake at 350 for 55-60 minutes. Put a thin glaze of lemon juice and confections sugar on top while the cake is still hot.
