1 T olive oil
1 lb. small red potatoes
2 c. asparagus, sliced in 1" pieces
1/4 tsp. salt & pepper, each
2 T chopped fresh basil

Directions:
Directions:
Preheat oven to 400. In a large zip-top plastic bag, combine
olive oil and potatoes, seal and shake to coat. Transfer
potatoes into a shallow roasting pan covered with cooking
spray. Bake 40 minutes, stirring a few times after first 10
minutes of cooking.

Add asparagus, salt, pepper; toss well. Bake an additional
15 minutes or until vegetables are tender. Adjust seasonings
and sprinkle with basil.
