2 cups milk 4 cups grated Velveeta cheese 1 Tbs butter or margarine 1 tsp salt 2 top-grade beers 1/2 cup shredded Monterrey Jack cheese
Heat milk in a medium saucepan; add Velveeta and stir constantly until all is melted. Add butter and salt; stir well. Add beer to taste. Let simmer 1/2 hour without boiling. Stir occasionally to keep cheese from burning on the bottom. Serve sprinkled with Monterrey Jack cheese on top.
