4 tsp sherry wine vinegar or red wine vinegar
3/4 tsp ground cumin
1/4 cup extra virgin olive oil
1/8 tsp salt
1/8 tsp pepper
2 medium heads red leaf lettuce, torn
3 medium tangerines, peeled and sectioned
1 medium onion, thinly sliced
2 medium avocados, halved, peeled, and cut into chunks
1 cup toasted pumpkin seeds
2 tsp cooking oil
1/2 tsp ground cumin
1/2 tsp salt

Directions:
1. For dressing, in a large bowl, whisk together the vinegar and cumin. Gradually whisk in olive oil in a slow stream. Add the salt and pepper.
2. Preheat oven to 325F. Spread pumpkin seeds on a cookie sheet. Add oil cumin, salt and stir to coat. Bake uncovered for 15 minutes till toasted. Transfer to paper towel to cool.
3. Add lettuce, tangerines, onion, avocados and pumpkin seeds to salad bowl Toss in dressing Serve at once.
