1/2 cup unsalted butter
2 lb yellow onions, peeled, halved and thinly sliced
1/2 tsp salt
1/2 tsp fresh pepper
4 lb white or sweet potatoes, peeled & cut into 1/2" cubes
1/2 cup milk
1/3 cup sour cream
Salt and pepper

1. Caramelized onions:
In a large skillet heat 1/4 cup of the butter. Add the onions and cook, stirring frequently, about 30 minutes or until brown. Season with 1/2 tsp salt and pepper. Remove from heat and set aside.
2. Potatoes:
Cook potatoes in large pot, covered in lightly salted water until tender. Drain.
3. Add the remaining 1/4 cup butter to pot and let melt. Mash potatoes until smooth. Stir in milk, sour cream, salt and pepper to taste. Stir in the caramelized onions, reserving a few for garnish. Cook and stir over low heat till heated through. Top with reserved onions. Serve.
