Ingredients:  
2 lbs. carrot cut up and cooked--then cooled
1 green bell pepper diced
1 medium onion -sliced
1/2 cup vinegar
1/2 cup oil
1 cup tomato juice
1 cup sugar
1 TBS. dry mustard
salt & pepper to taste

Directions:
Directions:
Mix all together and pour over the carrots. Let stand overnight. Drain off twice.
