4 eggs beaten, 4T milk or water, 4T butter,
1 small onion chopped med, 1/2 bell pepper
1/2 C grated mozzarella, 2C left over spaghetti sauce,or 1 small jar of favorite kind, Parmesan cheese enough to sprinkle, !/2 loaf Italian bread

Directions:
In small nuke proof bowl add 2T butter,chopped onion,chopped pepper,place in nuke for 1 min, stir & nuke 1 more minute. set aside. In small bowl put eggs & milk, beat till whatever ails you is gone.
Heat medium size fry pan to med-hi heat for 1 min. then add 2 T butter & quickly rotate pan to coat. Add well beaten eggs to hot pan & swirl to make even. turn down heat to just at medium .
Use appropriate flipper to slowly peel away the eggs on side of pan & tilt towards center. when
it looks thick on top , turn down heat to low.Spread the vegs mix on one side of eggs,sprinkle w/ mozzarella and flip the other side over top. Tilt pan to seal omelet. Heat your sauce in nuke for appropriate time and serve over omelet. Sprinkle w/ Parmesan cheese. Serve w/ pulled apart Italian bread...Ciao Baby *
