3 eggs
1 lb. ricotta
3 tbsps. sugar
4 tsp. baking powder
1 cup flour
1/4 tsp. salt
confectioner's sugar

Directions:
Directions:
Mix all ingredients except confectioner's sugar. Cover and let rise for 1 hour.

Drop by teaspoonfuls into about 2 inches of hot vegeatble oil (use small sauce pan). Don't crowd pan, make in small batches of about 4 - 6 balls. They will turn themselves. When lighlty browned remove from pan and place on paper towels to drain. Sprinkle with confectioner's sugar when cool and serve. Best when served same day they are made.
