Turkey Mozerella Meatloaf Recipe

1 pound ground lean turkey (can use beef)
1/2 cup Italian bread curmbs
1/2 cup bag crushed whole wheat saltines or 1 cup quick oats
1 cup ketchup
1/2 cup Dijon mustard
salt and pepper to taste
1/2 small diced onion or 1/4 cup dried diced onion
1 small bag shredded mozerella cheese

Directions:
Directions:
In a bowl, mix with fingers all ingredients, saving a little ketchup to drizzle over the top. Once thoroughly combined, spray bread loaf pan and press mix into it evenly. Push a few finger holes into top of the meatloaf 1/3 way down and drizzle ketchup over the top so some of it seeps down into the holes. Bake at 350 for 40-45 minutes.

Serve with red potatoes and carrots or sweet potatoes: wash and cube with skins on the potatoes and bite size carrot pieces. Place into a baking pan and drizzle with olive oil and salt and pepper. Bake for the same time as the meatloaf.

Turkey burgers are made almost the same way as the meatloaf. Green peppers can also be added to both which are cut up in small pieces.
