1/4 cup Italian bread crumbs
4 boneless skinless chicken breasts
2 eggs, beaten
1 cup white wine (drinking wine, not cooking wine)
1 jar sweet roasted red bell peppers
brown rice

Directions:
Directions:
Dip the chicken breasts in the bowl of beaten eggs, then coat in crumbs over a plate. Transfer into sprayed 9x11 inch baking dish. Bake chicken at 375 for 25 minutes. Take pan out of oven and pour over the whole jar of peppers in the juice and 1/2 to 1 cup white wine to taste and put back in the oven for an additional 10-15 minutes. This will prevent the peppers from burning.
