1 whole chicken
4 stalks celery, thinly sliced
1/2 small bag baby carrots, chop each in half
2 stalks leeks or other mild onion, chop and leave in nice full circles. Use only the white part of the leeks
2 boxes chicken stock or 4 cans (fat/sodium free)
salt and pepper to taste
1 bay leaf, remove the end
1 cup quick cook barley
1 teaspoon olive oil

Directions:
Directions:
Cook chicken over low heat and covered all day in a stock pot with the water filled up half way. When the chicken is ready to fall off the bone, take out and strain over sink to catch all of the stock in the pot and the bones are in the strainer. Fork off all the meat and put back into the pot with the stock, leaving all the skin and bones in the strainer. Add all the vegetables, seasonings and olive oil. Cook until the vegetables are done, approximately one hour. During the last 15 minutes, add in the barley. If you want a thicker stew, add more, a thinner soup, add less.
