6 c. sliced potatoes (5 large)
1/2 c. sliced carrots
6 slices of bacon
1 c. chopped onion
1 c. chopped celery
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
2 c. cream
Finely shredded cheddar cheese
parsley sprigs

Cook potatoes and carrots in boiling water until tnder, drain. Saute bacon until crisp, drain, & crumble. Saute inion an celery in 2 tbsp. of bacon fat. Combine potatoes, carrots, sauted vegetables, bacon, salt, pepper, milk, and cream. Simmer for 30 minutes. DO NOT BOIL - garnish with shredded cheese and parsley.
