2 C boiling water
2 C All Bran (bran buds)

1 C vegetable oil (or 1/2 and 1/2 with applesauce)
3 C sugar
4 large eggs

5 C whole wheat flour
4 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

1 quart buttermilk

4 C All Bran flakes
2 C chopped dates (clip with scissors dipped in hot water)
2 C pecans or walnuts
1 C coconut

Directions:
Directions:
Combine boiling water and bran buds; set aside. In large bowl, beat together oil, sugar and eggs. In separate bowl combine flour baking soda, powder and salt. Add to oil and egg mixture alternately with the buttermilk. Add soaked bran and mix in. Add bran flakes, dates, pecans and coconut and mix well.
Pour into greased muffin tins, filling almost to the top. Bake at 400 for about 18 minutes. (A cookie sheet under the muffin tin with keep the muffins from getting too dark on the bottom.)
