1/2 pound fresh mozzarella cheese
3 "beef steak" tomatoes, sliced
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1/2 cup chopped fresh basil leaves

Directions:
Directions:
Remove cheese from the brine and cut into 8-16 slices; sprinkle tomato slices evenly with salt and pepper. Place the tomato slices on a serving platter. Add the cheese slices and drizzled with olive oil. Cover and chill 4 hours. Just before serving, sprinkle with chopped basil. Makes 8 servings.
