1 medium onion
3 carrots
2 celery ribs
1 TBS sage
1 TBS cumin
1/2 TBS salt
Handful of cilantro and coriander
Shredded cheese (your preference)
1 can cream of chicken soup
1 16 oz. sour cream
4 huge TBS mayonnaise
1 can broth
Corn tortillas
Crisco oil
Jalapenos
Black olives
Refried beans (sides)
Rice (sides)

Directions:
Directions:
Simmer chicken, onion, carrots, celery, sage, cumin, salt, coriander, and cilantro on low for 3 hours. Let cool for approximately 30 minutes. Debone the chicken. To make the sauce mix the cream of chicken soup, sour cream, mayo, and one can of the broth that the chicken was cooked in. Mix and add cumin to taste. Fry tortillas about 5 seconds on each side. Pre-heat oven to 350F. Roll chicken, cheese, jalapenos (optional), black olives (optional), and some sauce in the tortilla and place them in a glass baking dish. Once the dish is full cover with sauce and cheese. Cook for about 30 minutes and then let stand for about 5 minutes.
